Processing explained

  • Washed (wet): cherry is depulped, fermented and washed. Cleaner, brighter cup, higher acidity. Preferred for specialty Arabica.
  • Natural (dry): cherry dries whole on raised beds. Fuller body, fruitier, heavier. Common in Brazil and Ethiopian naturals.
  • Honey / pulped-natural: pulp removed, mucilage left to dry. Sweet, balanced, between washed and natural.
  • Semi-washed / wet-hulled: traditional in some Indonesian and regional lots.
